This recipe is one of my favorites, and I’ve blogged about it before but I couldn’t think of a recipe more fitting than this one to share with you (once again) for this post!
My husband and I are usually on the same page about the things we eat, even if we aren’t eating the exact same foods. I, myself, tend to go back and forth between Keto (low carb), and calorie restricting while my husband is a pure blooded keto for life type of healthy person. There are certain things I always use Splenda in, such as my oatmeal (Splenda brown sugar mix), cream of wheat (either Granulated Splenda, or Splenda/sugar mix), and coffee (Granulated or Splenda/sugar mix, depending on how sweet I want it!)…but they are so simple and everyone knows how to incorporate Spenda into these things. I wanted to share a recipe that I make for my husband as a treat on his low-carb diet, one that is absolutely delicious with Splenda included.
Low-Carb Peanut Butter Bread
- ¾ cup natural peanut butter – smooth
- ¼ cup natural peanut butter – extra chunk
- 3 eggs
- 1 Tablespoon vinegar
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 2 Tbsp splenda
- Preheat oven to 350 degrees
- Blend peanut butter and eggs until smooth (I used my stand mixer) scraping sides of the bowl if necessary.
- Add remaining ingredients.
- Pour into loaf pan coated with non-stick spray, smooth the top.
- Bake 35-40 minutes, let cool before slicing.
