This is super easy to make and much better than any box mix you buy at the store. Once you make it, you’ll never go back to buying. It may seem like a lot of work or many steps but really it’s easy. As long as you don’t burn it, and get the mixture to thicken you are all set. Some people I know do not like adding in the egg, though I always have but it has been done that option is up to you.

  • 3/4 cup sugar
  • 1 1/2 tablespoon cornstarch
  • Pinch of salt
  • 2 cups milk
  • 2 ounces semisweet chocolate chopped
  • 1 egg
  • 2 tablespoons butter
  • 1 teaspoon vanilla extract
  1. In a medium saucepan, combine the sugar, cornstarch and salt. Add the milk and stir until the mixture is smooth. Add the chocolate. Over moderate heat, cook the mixture, stirring constantly (do not let it sit, it will burn quickly!) Cook until it boils and thickens, reduce heat immediately and set on simmer, stirring again constantly for about 2-3 minutes. Remove from heat.
  2. In a medium bowl using an electric mixer beat the egg until is is foamy. Gradually stir in about 1/2 cup of the hot milk mixture. Pour the egg mixture back into the remaining hot milk. Cook over low heat stirring constantly for about two more minutes.
